Spicy Peanut Noodles with Korean Style Chicken

This is the ultimate quick and easy weeknight dinner. While your Korean Style Chicken is in the oven, whip up these saucy & spicy peanut noodles.

SERVES: 2

Ingredients

  • 1 pack Rangitikei Korean Style Chicken
  • ¼ cup smooth peanut butter
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons chilli oil (or make your own)
  • 1 clove garlic, crushed
  • 1 tablespoon soy sauce
  • 2 servings dried wheat noodles
  • 1 spring onion, finely sliced
  • 1 teaspoon sesame seeds – black or white
  • 1 red chilli, sliced (optional)

Method

  1. Cook the chicken in the oven or air fryer as per packet instructions.
  2. In a mixing bowl add the peanut butter, rice wine vinegar, chilli oil, garlic and soy sauce and whisk to combine.
  3. Bring a pot of water to the boil and cook the noodles as per packet instructions.
  4. Pour about ½ cup of the noodle cooking water into the bowl with the sauce ingredients and whisk to combine until smooth and creamy. Add more water if you prefer a soupier consistency.
  5. Strain the noodles and add to the sauce. Toss to coat.
  6. Serve the noodles into bowls and top with the Korean Style Chicken, spring onions, sesame seeds & red chilli.
