Korean Fried Chicken Burgers

For an easy weeknight meal, try these crispy Korean fried chicken burgers that pack a punch of flavour and the right amount of spice!

Ingredients

  • 1 pack Rangitikei Korean Style Chicken
  • 4 brioche burger buns
  • ¼ telegraph cucumber, very thinly sliced
  • 1 teaspoon rice wine vinegar
  • ½ teaspoon chili flakes
  • 1 cup shredded savoy cabbage
  • 1 teaspoon sesame seeds
  • 1 spring onion, finely sliced

For the sauce:

  • ¼ cup kimchi, finely chopped
  • 2 tablespoons Japanese mayonnaise
  • 1 teaspoon lemon juice
  • 1 teaspoon sesame oil

Method

  1. Cook the Korean chicken and defrost the gochujang sauce as per packet instructions.
  2. While the chicken is cooking, add the cucumber, rice wine vinegar, chilli flakes and a pinch of salt to a medium bowl and let it sit at room temperature.
  3. In a separate bowl, combine the kimchi, Japanese mayonnaise, lemon juice and sesame oil.
  4. Toss the cooked chicken in the gochujang sauce and sprinkle over sesame seeds.
  5. Place the buns on a grill (or under the grill in the oven) until lightly toasted.
  6. To assemble, spread a tablespoon of sauce on the top and bottom of each bun. Add the shredded cabbage and sliced spring onion to the bottom bun, then top with the Korean chicken pieces. Finish with the pickled cucumber, spring onion and sandwich on your top bun.
