With fresh ingredients and a moreish miso dressing, this soba noodle salad is the perfect accompaniment to hero our crispy Rangitikei Karaage Chicken.

TIME: 30 minutes
Cook the Rangitikei Karaage Chicken in the oven or air fryer as per packet instructions.
While the chicken is cooking, cook the soba noodles in rapidly boiling salted water as per packet instructions. Drain and rinse under cold water. Shake off any excess water, then add back to the pot and toss through the sesame oil.
Add all the dressing ingredients to a small bowl and whisk until creamy.
To assemble, place the soba noodles on a large serving platter with the shredded red cabbage, edamame beans and radishes. Top with the karaage chicken pieces, drizzle over the dressing and sprinkle over the mint.
