Karaage Chicken Sliders with Miso Mayo

Fast to cook and faster to disappear from the plate, these savoury bites feature crispy karaage chicken, deliciously umami miso mayo, and a fresh vibrant slaw.

SERVES: 12 sliders


  • 1 pack Rangitikei Karaage Chicken
  • 12 small sliders buns

Miso Mayo:

  • ½ cup Japanese mayonnaise
  • 1 tablespoon miso paste
  • 1 clove garlic, crushed
  • 2 teaspoons rice wine vinegar


  • 1 cup shredded red cabbage
  • ¼ cup pickled ginger
  • ½ cup grated carrot
  • ¼ cup spring onion, sliced
  • ¼ cup coriander leaves


  1. Cook the karaage chicken in the oven or air fryer as per packet instructions.
  2. To make the miso mayo, put all the ingredients in a bowl and whisk until smooth.
  3. To make the slaw put all the ingredients in a bowl, add a pinch of salt and toss to combine.
  4. Lightly toast the sliders buns, then spread all the buns generously with the miso mayo. Add a spoonful of slaw and top with a piece of karaage chicken. Sandwich the top bun on top and serve immediately.
