Karaage Chicken Donburi

For a delicious and quick-to-cook dinner idea, this Karaage Chicken Donburi bowl will do the trick! And get you in the good books with your fried-chicken loving family.

Ingredients

  • 1 pack Rangitikei Frozen Karaage Chicken
  • 1 ½ cups Japanese short grain rice
  • 1 telegraph cucumber, peeled in ribbons
  • ½ red onion, thinly sliced
  • ½ teaspoon sugar
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon black or white sesame seeds
  • 4 tablespoons Japaense mayonnaise
  • 2 tablespoons shredded nori seaweed
  • 4 lemon wedges
  • 4 tablespoons pickled ginger

Method

Steam the Japanese short grain rice as per packet instructions.

Using a vegetable peeler, peel the cucumber into long ribbons. Place in a bowl with the sliced red onion, vinegar, sugar, sesame seeds and a pinch of salt. Toss to coat and place in the fridge until ready to serve.

Cook the karaage chicken as per packet instructions.

Divide the rice evenly between 4 serving bowls and top with the pickled cucumber and karaage chicken pieces.

Drizzle the Japanese mayonnaise over the karaage chicken and top with shredded nori.

Garnish each bowl with a lemon wedge and a spoon of pickled ginger.
