Preheat your oven or air fryer to 180°C.
Whipped Butter: Add the softened butter to a small bowl along with the maple syrup and a pinch of salt. Using an electric whisk or hand-held beater, beat the butter for about 1 minute, or until pale and fluffy. Set aside to serve.
French Toast: Whisk the eggs, milk, cream, sugar and vanilla together in a shallow dish. Set aside, until you are ready to cook the french toast.
Heat a large, non-stick frying pan on medium heat. Add a knob of butter to the pan and let it melt. Dip two pieces of the brioche in the egg mixture, turning the pieces over to soak. Fry in the pan for about 3 minutes each side, or until golden brown. Repeat with the remaining brioche and egg mixture, adding more butter to the pan as needed.
Hot Maple Chicken: Cook the buttermilk tenderloins according to the pack instructions, or until golden and cooked through. Meanwhile, cook the bacon in a hot frying pan until golden and crispy.
Add the maple syrup, chilli flakes, vinegar and a pinch of salt to a small pot. Place over high heat and bring to a simmer. Once simmering, remove from the heat and set aside to serve.
Serve the French toast topped with the buttermilk chicken, bacon and whipped butter. Drizzle over the hot maple and garnish with the thyme leaves.
