Buttermilk Chicken Gyros

With tender and crispy buttermilk chicken, crisp veggies, and zesty tzatziki, these gyros are a delicious Mediterranean-inspired meal.



  • 1 pack Rangitikei Buttermilk Chicken
  • 2 cups frozen oven fries
  • 4 pita breads or flatbreads
  • ½ cup cherry tomatoes, chopped
  • ½ cup cucumber, chopped
  • ½ cup pickled red onions
  • 1 cup cos lettuce, shredded
  • ¼ cup feta, crumbled (optional)
  • Lemon wedges, to serve

For the Tzatziki:

  • ½ large telegraph cucumber, grated
  • ½ teaspoon salt
  • 1 cup thick Greek yoghurt
  • 1 clove garlic, crushed
  • 1 tablespoon lemon juice
  • 1 tablespoon extra-virgin olive oil
  • ¼ cup mint or dill, roughly chopped


  1. Cook the buttermilk chicken and fries in the oven or air fryer as per packet instructions.
  2. Grate the cucumber and place it in a colander. Sprinkle over ½ teaspoon of salt and set aside for 10 minutes so that the cucumber releases some of its liquid.
  3. Squeeze all the remaining liquid out of the cucumber and place in a bowl with the yoghurt, garlic, lemon juice, olive oil and herbs. Mix to combine and season to taste with salt & pepper.
  4. Warm the pitas or flatbreads and spread with a generous amount of the tzatziki sauce. Top with the cos lettuce, oven fries, buttermilk chicken tenders, chopped tomatoes, chopped cucumber and pickled onions. Sprinkle with feta and add a squeeze of lemon. Roll up the gyros and wrap with a piece of parchment paper or foil.
  5. Alternatively, lay all the gyros fillings out on the table and let everyone assemble their own gyros!
